|200g||Sirtakis herder’s cheese|
|40g||black olives, pitted|
|1½ Tbs.||balsamic vinegar, light|
|2 Tbs.||olive oil|
|1||small clove of garlic, crushed|
|Salt, sugar, freshly ground pepper|
Wash and dice the tomatoes and put in a bowl. Finely dice the herder’s cheese. Cut the basil into small pieces (do not chop!). Halve the olives. Mix the olive oil and balsamic vinegar together. Season the oil-and-vinegar mixture to taste with salt, pepper, garlic and a bit of sugar. Add all the ingredients to the bowl with the tomatoes and carefully mix together. Halve the avocados and arrange on a plate with the salad. Serves well with a freshly baked baguette.
